About Globe Artichoke

Globe Artichokes were prized by the ancient Greeks and Romans, who regarded them as a luxury food reserved for special occasions. They later became popular throughout Renaissance Italy and France before finding their way into gardens around the world. Their dramatic appearance and edible flower buds have made them favourites of both gardeners and cooks for centuries.

Despite their impressive size, Globe Artichokes are members of the daisy family. Their large, silver-green leaves form bold clumps, while tall stems carry the familiar edible flower buds. If left unharvested, these open into spectacular violet-purple flowers that are highly attractive to bees and other pollinating insects. At The Herbal Garden they are among the most striking plants in the kitchen garden, providing interest from spring through to late summer.

Uses & Benefits

Globe Artichoke is valued as much for its ornamental beauty as for its harvest. The unopened flower buds are considered a culinary delicacy, while the handsome foliage provides year-round structure in the garden. Traditionally, the leaves have also been used in herbal practice, particularly in support of healthy digestion.

Culinary Uses

The unopened flower buds are harvested before they begin to open and are delicious steamed, boiled or roasted. The fleshy bases of the scales and the tender heart are the prized edible portions, offering a delicate flavour that pairs beautifully with butter, olive oil, lemon and fresh herbs.

Smaller buds can be grilled whole or preserved in oil, while young stems may also be cooked. Once the flower opens, however, the bud becomes too fibrous to eat, although the vivid purple blooms become one of the garden's most spectacular summer displays, attracting bees and adding striking architectural beauty.

Medicinal Uses

In traditional European herbal practice, Globe Artichoke leaves have long been valued for supporting healthy digestion and liver function. Modern herbalists continue to appreciate the leaves for their naturally bitter compounds, which have traditionally been used to encourage digestive processes.

Today, Globe Artichoke is best enjoyed as part of a healthy lifestyle and should complement rather than replace professional medical advice.

Growing & Harvesting

Growing

At The Herbal Garden, Globe Artichokes have a permanent place in our Potager, where they provide both structure and an abundant harvest. They thrive in the rich, fertile soil and enjoy a sunny, open position, returning year after year with very little attention.

Once the artichokes have been harvested, we cut the plants back and simply 'chop and drop' the foliage onto the bed. As it naturally breaks down it creates its own mulch, enriching the soil and helping to maintain the wonderfully fertile conditions the plants love. This also encourages a fresh flush of growth through autumn and winter, so the handsome silver-green foliage remains an attractive feature in the Potager for much of the year.

Harvesting

Harvest the flower buds while they are still tightly closed and before the scales begin to separate. Cut the stems with a sharp knife, leaving a short length attached to the bud.

If a few buds are left to flower, they provide one of the garden's most spectacular displays, with large thistle-like blooms that are irresistible to bees and make excellent dried flowers.

Cautions

Globe Artichoke is a safe and nutritious food for most people. As a member of the daisy family, however, it may occasionally cause allergic reactions in people sensitive to plants in the Asteraceae family, because shared proteins across these closely related plants can trigger a response in susceptible individuals. When used medicinally, Globe Artichoke should complement a balanced lifestyle and is not a substitute for professional medical advice or treatment.
